Choco-Phrase of the Month

What are those cocoa percentages all about? Northern California’s Guittard Chocolate Company (www.guittard.com) was one of the first companies to include this information on packaging. Basically the number indicates how much cocoa mass or actual bean, cocoa powder and cocoa butter is contained in the bar. The remaining percentage is the amount of sugar (and vanilla, emulsifier, and/or milk solids- if they are used).

A MORSEL OF NW CHOCO- HISTORY

Dilettante’s Chocolates (www.dilettante.com) has been satisfying Seattle’s sweet teeth for over 30 years. Dilettante’s founder Dana Davenport has a family chocolate lineage that spans three generations. Many may not be aware that part of this family legacy left Hungary and traveled by sea and train to Portland in 1910. Here the Davenport chocolate Company was established and operated until 1927. Meier & Frank and Lipman & Wolf department stores were among their first customers.



 

Sad Time for Scharffen Berger Chocolate Lovers

The end of January brought news that Hershey plans to close its Scharffen Berger factory in Berkeley by the end of this year. It was also revealed that their bars have been produced in Illinois for quite some time now. As a result, the popular factory public tours are no longer given. Whether the factory's Café Cacao will remain open still remains to be seen. Hershey acquired the popular artisan chocolate company in 2005.

New Mexico Chocolate Discovery

This month Hershey scientists in Pennsylvania have confirmed that the residue found in tall, cylindrical jars, excavated in northwest New Mexico during the 1800's and 1920’s is indeed from cacao. What is amazing about this discovery is that cacao doesn’t grow north of Mexico. The native people in this area of the Southwest apparently had more contact with their neighbors in Mesoamerica than previously thought.
