Explore Lake Oswego's sweetest nooks and crannies on Saturday, June 30th from 2-5:30 pm. Some of the places we’ll be visiting include Moonstruck, Bernard Callebaut, St. Honore, Scratch, and Crave Bake Shop, home to the Food Network's Cupcake Wars champion. WORD OF THE MONTH

Check the ingredients on a chocolate bar and you’ll most likely find lecithin, a natural extract from soybean and egg yolk used to thin out the thickness of chocolate. It also helps fats stay blended. It is in about 90% of chocolate bars and usually no more than .05% is used. However, approximately 1 out of 10 small artisan chocolatiers prefer to use extra cacao butter in place of lecithin. The cacao butter is more expensive, but many feel the final product is worth the cost.

POUCH? WHAT POUCH?

A US company has developed the food packaging technology that will allow pouches to dissolve when exposed to water. With no noticeable odor or taste, this may be the future for instant soups, cereals, spices, and hot cocoa. Peek at this link for more details.


POD TO THE RESCUE

Brazilian researchers suggest that pectin be extracted from cocoa pod husk waste. Pectin, a thickening agent found in vegetables and fruit used to gel jellies and jams, is usually derived from apples or orange peels. It is also used in medicines and is a source of dietary fiber. One gram of pectin could be extracted for every 10 grams of pod waste according to the recommendation. When you realize that for every ton of dried cocoa beans, there is 10 tons of pod husk waste, this can also be important in waste reduction industry wide throughout the cocoa belt- in countries producing cacao within 10-20 degrees north and south of the equator.
